In 2018, the third generation of the Martin family with entrepreneurial spirit and desire for growth and continuous improvement, embarked on a new project; the construction of a new drying facility in Cuarte de Huerva (Zaragoza) with more than 6,500 m². The inauguration of the new facilities in January 2020 allowed them to achieve a production process with the highest standards of quality and food safety, supported by the IFS and ETG certifications. They mainly make Serrano ham in a traditional way, carefully selecting the best fresh pieces from castrated females and males, fatty and semi-fat, classifying them according to their characteristics to carry out a curing process adapted to each piece. GREENFRIO equipped the new EUTIQUIO facilities with 15 high-efficiency autonomous dryers running with the R513A refrigerant to carry out the entire drying process: Post-salting, drying, stoving and maturing. The equipment is built using high quality materials and the best components on the market.

There are several technical aspects to highlight that improve the operation and efficiency of the equipment, such as the suction separator with exchanger, the electronic expansion valve, the direct transmission EC radial fans, or the compressors with modulation capacity. However, there are two concepts that further improve the energy efficiency of this equipment: floating condensation and the use of proportional free-cooling preforming through an enthalpic calculation. All this makes this equipment one of the most reliable and efficient solutions on the market for the ham drying process, providing safety, added value and considerable energy savings.
